Vegan Filipino Avocado Shake

We are ten days into Vegan January, and I think that I’m finally starting to get the hang of this whole plant-based thing. The beginner’s key to veganism, like many new habits, is balance. Sometimes we are on our best new year’s resolution grind and staying focused, and sometimes the literal collapse of the United States is happening in front of our very eyes, and we need all the comfort food in the world to make it just a little bit better.
Avocado shakes are one of my favorite treats to get whenever I go to the Filipino grocery store or eat at a Filipino restaurant. Watching ripe avocado get blended with a concerning about of sugar and milk has always been so satisfying to me, and we don’t have to sacrifice that satisfaction on a vegan diet! Thanks to a growing world of vegan substitute products, I’ve recreated a non-dairy version of the beloved dessert drink that you can make at home. The best part? It takes barely no time at all! The second best part? It tastes just like the real thing! The third best part? It’s green so you can pretend to be drinking a healthy smoothie!

Vegan Filipino Avocado Shake
Serves: 2
Total time: 5 minutes
Ingredients
2 ripe avocados
6 tbsp. sugar
2 cups oat milk
1/2 cup dairy-free vanilla ice cream
2 cups ice
Instructions
Blend all of the ingredients in a blender until smooth
Pour into a glass & enjoy (best enjoyed with a fun straw!)
