Baked Goat Cheese Gnocchi
Tik Tok made me do it
What better way to reverse all of my Vegan January progress than by baking a whole log of cheese?! After seeing three videos in a row of the same baked feta pasta recipe on Tik Tok, I knew that I had to get in on the action. But with my own twist, of course!
This baked gnocchi comes together in 40 minutes, but 30 of those minutes are spent in the oven! This hands-off recipe requires no stove time, and is a little more guilt-free than the recipes I’ve seen on Tik Tok. This baked gnocchi uses goat cheese and a bag of frozen cauliflower gnocchi from Trader Joe’s. If this is inaccessible to you, any frozen gnocchi will do! If using fresh, cook according to package directions.
We are all about easy meals at home this year that are indulgent while also sneaking in some greens. Make for a weeknight dinner or to impress your roommates/family on a cold night!
Baked Goat Cheese Gnocchi
Serves: 2
Total time: 40 minutes
Ingredients
5 oz log of goat cheese
12 oz cherry tomatoes
2 cloves of garlic, unpeeled
3 tbsp olive oil
1 tsp red pepper flakes
1 tbsp honey
Salt and pepper to taste
12 oz frozen gnocchi
1 cup packed spinach
Basil for garnish
Instructions
Preheat oven to 400 degrees F and line a sheet tray with parchment paper
In a baking dish, place the log of goat cheese in the middle and pour in the tomatoes and unpeeled garlic cloves to surround it. Top the goat cheese with oil, red pepper flakes, honey, and salt and pepper to taste.
Spread out your frozen gnocchi on the sheet tray so that no pieces are touching. Spray with cooking spray (optional).
Place both the baking dish and baking tray in the oven for 30 minutes until gnocchi is tender and cheese mixture is bubbling. Mix the gnocchi halfway through.
Remove the garlic cloves from their shells and smash them with the back of a fork. Mix back in and mix the sauce together until fully combined.
Mix in gnocchi and spinach until the spinach is wilted and everything is covered in the sauce.
Top with fresh basil and enjoy!
