Diner Style Garlic Bread
Your local diner’s most underrated dish
I can confidently say that I don’t know anybody who would ever turn down a slice of garlic bread. Oily, garlicky carbs are a love language that transcends all taste buds, cravings and cooking abilities. This recipe is inspired by one of my favorite garlic breads in Chicago: Stella’s Diner. This Lakeview institution is known for their typical diner foods, but the standout is their largely portioned, insanely buttery garlic bread. My version is a bit healthier (if you can imagine that), with the same garlicky, herb-y flavors of this local delicacy. If you can’t order takeout from them, use this recipe to make it at home!
Diner Style Garlic Bread
Serves: 3-4 people
Prep time: 10 minutes
Bake time: 25 minutes
Total time: 35 minutes
Ingredients
1 loaf of french bread
1/2 cup of unsalted butter, room temperature
1/4 cup of parsley, chopped
6-8 cloves of garlic, minced
Salt and pepper
Instructions
Preheat the oven to 400 degrees F
Cut the bread: Create slices without cutting all the way through by stopping until there is about half an inch still in tact at the bottom. Slice pieces about an inch apart.
Combine butter, parsley and garlic until well incorporated. Season with salt and pepper.
4. Using a spoon or a pastry brush, spread about 2tsp of butter mixture in between each slice. Reserve the remaining mixture.
5. Wrap tightly in foil and cook for 16-18 minutes. Remove from the oven, unwrap and spread remaining butter mixture over the top. Cook unwrapped for an additional 8 minutes.
6. Serve and enjoy!
