Cacio E Pepe White Bean Dip
Keeping it short and to the point
I’ve been looking at more food blogs than usual and cannot stomach these drawn out introductions. Yes, I understand that the algorithm favors posts like that. No, I don’t believe that justifies a five paragraph essay reminiscing summers at your aunt’s lake house before introducing a seven-layer dip recipe.
Anyway, here is a recipe that is just as short and a little less rant-y than this intro. This dip comes together in five minutes and uses ingredients that you may already have on hand as you are reading this! Spread this cheesy, peppery dip on bread, get your health on and accompany with some celery and carrots, or use whatever your dip-loving heart desires!
Cacio E Pepe White Bean Dip
Serves: 3-4
Total time: 5 minutes
Ingredients
2 tbsp of unsalted butter or olive oil
2 garlic cloves, smashed
1/2 tsp of black pepper
1 15oz can of cannellini beans
1/3 cup of Parmesan, grated
Instructions
Over low heat, melt the butter or olive oil. Once it is is melted, whisk in the garlic and pepper until the garlic has softened, about two minutes.
Add the pepper mixture, beans and cheese to a blender or food processor and blend until smooth. Add salt as desired.
Top with more pepper or Parmesan crisps.
Serve with crusty bread or crudites and enjoy!
